    Wash the Okra

    Place the whole okra in a large bowl filled with water and add 1 teaspoon of salt.

    Soak for 10–15 minutes to help loosen dirt and residue. Gently rub the surface of each okra, then rinse thoroughly under clean running water and pat dry.

    Slice the Okra

    Trim off the stems and cut the okra into 1 cm (½-inch) pieces.

    Prepare the Egg Mixture

    Whisk 3 eggs with ½ teaspoon salt and a pinch of white pepper. Add chopped green onions and a few drops of sesame oil if desired.

    Heat 1 tablespoon of oil in a non-stick skillet over medium heat.

    Pour the egg mixture over the okra. Once the eggs begin to set, gently move the eggs with a spatula so they cook evenly.
