  • 200 g 牛柳 beef tenderloin (切條 Cut into strips)
  • 1 顆 piece 芒果 Mango (選用剛熟但不會太軟的芒果,切條 Choose mangoes that are just ripe but not too soft and cut into strips.)
  • 1/2 顆 piece 洋蔥 Onion (切絲 Cut into pieces)
  • 1/2 顆 piece 蔥 Green Onion (切段 Cut into pieces)
  • 2 瓣 clovers 蒜頭 Garlic (切片 Cut into slices)
  • 2 茶匙 Teaspoon 食用油 Cooking Oil
  • 牛柳醃料 Beef tenderlion Marinade:
  • 1 茶匙 Teaspoon 醬油 Soy Sauce
  • 1 茶匙 Teaspoon 蠔油 Oyster Sauce
  • 少許 a little 白胡椒粉 White pepper
  • 1 茶匙 Teaspoon 米酒 Chinese rice cooking wine
  • 1 茶匙 Teaspoon 玉米粉 Corn startch
  • 少許 a little 油 Oil (鎖水用)
  • 調味料 Seasoning:
  • 1 茶匙 Teaspoon 醬油 Soy Sauce
  • 1 茶匙 Teaspoon 蠔油 Oyster Sauce
  • 1/2 茶匙 Teaspoon 糖 Sugar
  • 20 克 g 水 Water

    醃牛柳 Beef tenderloin marinade

    牛柳加入醃料拌勻,醃約 15 分鐘。
    Mix beef tenderlion with marinade and let sit for 15 minutes.

    炒牛柳 Stir-fry beef

    炒牛柳:熱鍋加油,將牛柳炒至七分熟,盛出備用。
    Heat oil in a wok, stir-fry beef until 70% cooked, then set aside.

    炒配料 Stir-fry garlic, onion, green onion

     

    同鍋加油,炒香蒜片與洋蔥絲,再加蔥段拌炒。
    In the same wok, sauté garlic and onion, then add green onion and stir-fry briefly.

    加芒果與牛柳:Add mango strips and beef

    加入芒果條拌炒,再加入牛柳回鍋。
    Add mango strips, stir briefly, then return beef to the wok.
