Put the pork belly in a pot with cold water, ginger, scallion, and peppercorns. Bring to a boil, then simmer for 25–30 minutes until fully cooked.



Soak the cooked pork in ice water for 5 minutes to firm up the texture.

Slice the pork thinly and arrange neatly on a plate.

Mix all sauce ingredients together; add chili oil if you like it spicy.

Pour the garlic sauce over the sliced pork and serve. Best served chilled or at room temperature.
