Soak the glass noodles in warm water until soft, then cut into shorter lengths.

Heat oil in a pan, sauté minced garlic and ginger, then add minced pork and stir-fry until browned.

Add spicy broad bean paste and stir well.

Add edamame and stir-fry until half cooked.

Season with soy sauce, cooking wine, salt, sugar, and pepper. Add water and bring to a boil.

Add soaked noodles and stir-fry over medium heat for about 2 minutes until the noodles absorb the sauce.


When the sauce is mostly absorbed, drizzle with sesame oil (or chili oil) and toss with chopped scallions before serving.
