Back when I lived in Hong Kong, stir-fried glass noodles with minced pork and edamame was one of my mom’s go-to dishes. She always said it was perfect for busy evenings—simple, quick, and satisfying. The savory aroma of pork and spicy bean paste filled our small kitchen, and the noodles soaked up all that rich flavor. I loved twirling them with my chopsticks, feeling that this was the true taste of home.

Now, living in Canada, I often make this dish on cool evenings after a long day. The rising steam and familiar scent instantly take me back to those comforting moments in my mother’s kitchen—a warm reminder that no matter where I am, home can always be recreated, one dish at a time.
