Golden Shrimp has always been one of my favorite dishes. When I was a child, my mom would make it during family gatherings or festive dinners. As soon as she started frying the salted egg yolk, the kitchen would fill with a buttery aroma, and I’d watch the golden bubbles rise in the pan like little bursts of sunshine. Now, when I make it myself, the smell brings back those warm memories of home and togetherness.

    Trim off shrimp whiskers, legs, and eyes. Gently cut along the back to remove the vein, rinse, and pat dry.

  2. Marinate Shrimp

    Marinate with Shaoxing wine and pepper for about 15 minutes.

  3. Steam salted egg yolk

    Steam salted egg yolks for 10 minutes, then mash them with a fork.

  4. Pan-fry shrimps

    Coat shrimp lightly with cornstarch and pan-fry until golden. Remove and set aside.

  5. Stir salted egg yolks

    In a pan over medium-low heat, melt the butter. Add minced garlic and sauté until fragrant, then stir in the mashed salted egg yolks.

  6. Combine

    Cook until the mixture becomes foamy and golden, then toss in the shrimp until fully coated. Serve hot.

  • Wait until the salted egg yolk sauce bubbles and turns creamy before adding the shrimp — that’s when the flavor is richest.
