Thick bread gives the best texture. Medium-low heat ensures the cheese melts before the bread becomes too dark. Combining Swiss, Cheddar, and mozzarella creates the perfect balance of flavour and melt.
Spread mayonnaise evenly on one side of each slice of bread.

Turn the bread over.
Layer the Swiss cheese, followed by the Cheddar.
Add freshly ground black pepper if desired.

Close the sandwich with the mayonnaise-coated sides facing outward.
Heat a non-stick skillet over low heat, close the lid for 2-3 minutes each side until the bread becomes golden brown and crispy.

Remove from the skillet.
Rest for one minute before slicing.
Serve immediately.
