This Chinese Okra Omelette is one of those comforting dishes that reminds us of home. After moving to Canada, it became one of our favorite quick weeknight meals because it takes less than 15 minutes to prepare and pairs beautifully with steamed rice, sourdough toast, or even a fresh garden salad.

The soft, fluffy eggs combined with the crisp, tender okra create a simple yet satisfying meal that’s perfect for busy North American families who enjoy wholesome homemade cooking.

Wash the Okra

  1. Place the whole okra in a large bowl filled with water and add 1 teaspoon of salt.

    Soak for 10–15 minutes to help loosen dirt and residue. Gently rub the surface of each okra, then rinse thoroughly under clean running water and pat dry.

    Trim off the stems and cut the okra into 1 cm (½-inch) pieces.

    Whisk 3 eggs with ½ teaspoon salt and a pinch of white pepper. Add chopped green onions and a few drops of sesame oil if desired.
