This easy Garlic Stir-Fried Cabbage is a quick Chinese-style vegetable dish made with fresh cabbage, plenty of garlic, and a touch of soy sauce. Ready in about 10 minutes, it is perfect for busy weeknight dinners.
Cut the cabbage into bite-sized pieces or coarse strips.
Bring a pot of water to a boil. Add the cabbage and blanch for about 30–60 seconds, just until it begins to soften. Drain well and set aside.

Heat the cooking oil in a wok over medium-high heat. Add the minced garlic and stir-fry briefly until fragrant. Be careful not to burn the garlic.

Add the cabbage and stir-fry over high heat for 1–2 minutes.
Add the light soy sauce and sugar, if using. Toss quickly until everything is evenly coated.

Turn off the heat. Add a few drops of sesame oil if desired and serve immediately.
